gluten free pumpkin protein pancakes

My holiday cravings are already off to a rough start. I just want pumpkin spice everything. So to stifle my hangry stomach, here is a Pumkin Protein Pancake recipe I've put together to kiss my cravings goodbye.

Recipe:

1 cup egg whites

1/2 cup pure pumpkin

1/4 cup almond flour

1/4 teaspoon cinnamon

1 scoop vanilla spirutein (can be replaced with protein of your choice. this one is what's responsible for the 4 grams of sugar listed below, so switching it out will change that up. I still definitely recommend vanilla) 

1 tbs coconut oil

*Makes 3 medium sized pancakes.

Directions:

1. Mix pumpkin, egg whites, almond flour, cinnamon, and protein until smooth. 

2. Spread coconut oil on pan and heat pan

3. Pour 1/3 of batter onto pan and cook on low heat. Don't forget to flip! Makes one pancake. Use the rest of the batter to make the last two. Simple!

Note: To keep my sugar consumption down I prefer to use all natural peanut butter as my topping.
